Why didn't we use plate carriers earlier in history?

So, first of I'm not a veteran, nor have I ever been enlisted in any form of military organization. That being said, I wondered, why the concept of: hey, lets put a thick steal plate infront and at the back of our torso is something that militaries have been doing for only like 25 years by now. I now there has been kevlar vests but as far as I know, those things don't perform well with rifle fire. Why didn't humans use plates since....I don't know, WWI or even before that? It's not exactly quantum physics.
